Achaval Ferrer Quimera 2014

The Achaval Ferrer ‘Quimera’ is a red wine blend produced using Malbec, Cabernet Sauvignon and Merlot grapes. Unusually, blending for the Quimera takes place early on in the winemaking process; while most producers keep ingredients separate for as long as possible to see how they develop, Roberto Cipresso and the rest of the Achaval Ferrer team are adamant about the benefits of early blending.

The fermented old vine fruit of Quimera is immediately racked into barrels, French oak (95%) and American oak (5%). This early incorporation aims to produce a well-integrated, marriage of fruit,which may well account for the sleek, layered complexity which habitually characterises the Quimera.

The wine is then aged for twelve months in new oak (40%) with the balance one year old oak. The vineyard blend is principally Malbec with similar percentages of Cabernet Sauvignon and Merlot. Yields are restricted at around 18hl/ha and the wine is neither fined nor filtered. The combination of old vine fruit and tempered production contribute a wonderful intensity and concentration in the finished wine, whilst the high altitude ensures a vitality and freshness.
