Bertha's Revenge Irish Milk Gin is produced at Ballyvolane House in Cork in a converted cattle shed which is now a working distillery. One of the main distinctions about Bertha is that whey ethanol is used as the base spirit, of which 96% is bought from a local cheese-making company who ferment and distill the whey on-site. Local spring water is added to the whey alcohol in the 125 litre still then the botanicals are added to the mix - 18 in total.

The ingredients are macerated for a period, before gently introducing heat and starting the distilling run. After the hearts are collected, it is then cut with local spring water to bring it down to 44%ABV and allowed to settle overnight. The final cut brings the abv down to 42% ABV, after which the gin is bottled.

All bottling is undertaken by hand, and each batch is recorded on the bottle. Usually producing somewhere in the region of 75 bottles per run, so it is genuinely small-batch!
