Pietas Carignan Vieilles Vignes Pays d'Hérault IGP 2018

According to Ancient Rome the man who possessed 'Pietas' performed all his duties towards the deity and his fellow human beings fully and in every respect. The sacred nature of Pietas was embodied by the divine personification Pietas, a goddess often pictured on Roman coins. The grapes used to craft this top quality wine are carefully selected from the best old Carignan vines, located in unique terroirs. They are mechanically harvested early in the morning when the temperatures are low in order to keep the grapes fresh and avoid oxidation. Fifty percent of the grapes go through the process of thermo-vinification to rapidly extract all the colour, aromas and tannins from the fruit. This part of the wine is fermented at low temperature, 20°C, to keep all the fruity aromas. The remaining 50% follows a traditional vinification process in tanks. This way, the colour is extracted naturally from the skins. Once the fermentation process is over, 50% of the wine is aged with French staves for 4 to 5 months. Cherry red in colour the wine displays an abundance of red berry aromas with vanilla hints. The palate is full-flavoured and easy-drinking. Enjoy with grilled vegetables, beef stew, red meat.
