The Wine Merchants White Burgundy by Domaine des Deux Roches 2017

The Wine Merchants White Burgundy is a delicious expression of mineral Burgundian Chardonnay created by Jean-Luc Terrier and Christian Collovray. The vineyards of Burgundy sit along a 250 by 5/6-kilometre prehistoric limestone ridge that runs through the valleys carved out by the river Saône. This wine is made from vines in the southern part of the region, on north-westerly facing slopes which allow the grapes to mature late into the harvest season, developing physiological ripeness slowly, under stress, in a precarious continental climate.

The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures (no higher than 18˚C) before being transferred into a mix of temperature-controlled stainless steel vats and some oak barrels to undergo alcoholic fermentation. Most of the wine is matured on fine lees in steel tank, whilst 10 percent of the wine is raised in 228-litre oak barrels.

The Wine Merchant’s White Burgundy opens with aromas of hawthorn and white flowers, alongside notes of white stone fruit and lemon zest. On the palate, it is well balanced with a touch of cream, toasty hazelnut, and a persistent, mineral finish. Well-structured but refreshing, it is ample and charming.
