Dolin Vermouth de Chambéry Blanc
Dolin has long been considered the benchmark for fine Vermouth and is one of the last remaining independent producers. Recognised as the creator of Vermouth de Chambéry, Dolin has cooked up the same recipes in the Alpine hills of Chambéry since 1821. They continue to make their authentic products according to the principles and recipes that made Vermouth de Chambéry so famous; production in Chambéry itself, the maceration of real plants rather than pre-prepared infusions, and the unique addition of sugar as opposed to other sweetening products. These are remarkable Vermouths with freshness, purity and complexity. The Dolin Vermouth de Chambéry Blanc contains some 32 plants and spices including hibiscus, basil, cinnamon and Alpine artemisia amongst others. This has rich orange citrus fruit aromas, as well as some sugary, toffee character. Other botanicals that include cinchona bark and hyssop, but you may also identify nutmeg, cinnamon and custard. There is a distinct creamy texture, too. More complex and sweeter than the 'Dolin Dry'", this French white vermouth can be served on the rocks or added to a fruit liqueur in the tradition of the "Chambery-cassis", which was one of Hemmingway's favourites!
