Cantine Paolo Leo Passitivo Appassimento Primitivo 2022
The Cantine Paolo Leo Passitivo is a red wine produced using only the finest hand-picked Primitivo grapes from low-yielding vineyards in Puglia, southern Italy. A portion of these grapes follow a rare winemaking technique called 'appassimento', whereby the grapes are dried for a brief period to concentrate their aromas and rich fruit flavours. The resultant wine is intense ruby-red in colour with a complex bouquet reminiscent of cherries, raspberries and redcurrants. The partial oak ageing adds a pleasant roasted and spicy aroma and makes this full-bodied and supple red wine perfect with roasted red meats and mature cheese.
