High West Campfire Whiskey
High West Distillery was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to the Maker’s Mark Distillery in Loretto, Kentucky. In 2004, David and his family relocated to Park City, Utah to begin their new venture, where they began distilling in 2007. They chose Park City because of David’s love of the Old West and Utah’s little-known whiskey history. The High West Campfire Whiskey is the world's finest blend of scotch, bourbon and rye whiskies ranging in age from 4 - 8 years old. The peated Scotch whisky (from an undisclosed source) in this blend offers a delightful smoky note, reminiscent of a campfire. The nose is floral, fruity, bright and spicy, notes of caramel, butterscotch, light smoke and smouldering wood from a campfire the morning after, jasmine, chai tea, sandalwood, leather, tobacco, pine resin and toasted bread. To taste vanilla, honey, toffee with some nice fruit, blueberries and black cherries, chai spices - nutmeg, cinnamon, orange zest, salty caramels, tobacco, gentle smoke! The finish is long, sweet, spicy and smoky.
