Castello della Sala Cervaro della Sala 2021
The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century, Monaldeschi della Cervara and this award winning white wine is named in honour to the family. A blend of Chardonnay grapes and a small quantity of Grechetto the concept was to craft a white wine that had the capacity to age over time and represent the elegance and complexity of this unique estate. First produced in 1985, the Cervaro della Sala was one of the first Italian white wines to have both malolactic fermentation and ageing take place in barriques. Cervaro della Sala 2021 is a light straw yellow in color with greenish highlights. The nose offers aromas of chamomile, white flower blossoms and flint. The palate is savoury, lively, fresh, and defined by notes of vanilla, citrus fruit, and light hints of hazelnut butter. A Mediterranean style wine with outstanding ageing potential.
