Domaine Perrot-Minot | Morey St Denis
Domaine Perrot-Minot, located in Morey St Denis, is one of the most acclaimed wine estates in Burgundy renowned for its opulent and aromatic wines crafted by Chistophe Perrot-Minot. The estate, which covers 12.5 hectares, is an amalgam of two sources. The original holdings, inherited from Christophe’s maternal grandfather, were bolstered significantly by the acquisition of Domaine Pernin Rossin in 2000. In addition, the grands crus of Chambertin, Chambertin Clos de Bèze and Chapelle-Chambertin are made from purchased grapes, without the word ‘Domaine’ on the label.
Yield's are very low and the whole winemaking process is meticulous, which contributes to the outstanding quality of Perrot-Minot's concentrated wines. Pressing is done with the lightest of touches, utilising only the free run juice, and the wines are not punched down, preferring to gently pump over just enough to keep the must wet. After fermentation, the wines are racked into oak barrels and aged for up to 18 months before bottling. The percentage of new wood has decreased over the years to a maximum of 30% for the Grand Crus and selected Premier Crus. The domaine is currently undergoing conversion to biodynamic viticulture, with the first fully biodynamic vintage completed in 2018.
