Sancerre

Perched on a hilltop in the Central Loire, the medieval town of Sancerre is the spiritual home of Sauvignon Blanc. While the grape is now grown globally, it is here - on the fossil-rich, Kimmeridgian limestone and flint soils - that it finds its most articulate and elegant voice.
Unlike the tropical "fruit bombs" of the New World, Sancerre is a wine of structure, tension, and stone. The region's unique terroir, composed of "Caillottes" (pebbles) and "Silex" (flint), imparts a signature smoky minerality (often called pierre à fusil or "gunflint") that simply cannot be replicated elsewhere.
Expect notes of gooseberry, freshly cut grass, and crushed oyster shell. It is the ultimate gastronomic white, possessing the acidity to cut through rich foods and serving as the perfect partner for the region’s famous goat cheese, Crottin de Chavignol.
