Dyfi Distillery Hibernation Gin
The Dyfi Distillery Hibernation Gin is the first and only gin in the world to be aged in a fully seasoned 100 year old white port cask, which was provided by iconic Portuguese producer, Niepoort Vinhos. The botanicals foraged for the Hibernation Gin are influenced by the wild fruit harvest and include wild crab apples, bilberries and blackberries. These are combined with carefully selected classic, and other locally-foraged botanicals, before being precision-distilled and then left to rest in the extremely rare White Port cask. Bottled at 45% ABV without chill-filtration each bottle is hand signed and lot numbered, recognising the extremely limited production of this gin. Hibernation Gin is an exquisite sipping gin, optionally chilled, or as a martini, and also makes a delicious negroni. It also serves as an excellent Gin & Tonic, no surprise there then, as traditional White Port & Tonic is also such a fine combination!
