Hundred Hills Signature Rosé 2018
The Hundred Hills Vintage Signature Rosé Sparkling Wine was created from small quantities of Pinot Noir from the Winery Bank Vineyard, a site that brings out the greatest intensity from this grape and Chardonnay from the Meadow Woods Vineyard. All grapes were harvested by hand and transported to the winery. After gentle pressing in the Coquard press, the Pinot Noir musts were fermented in stainless steel tanks, and the Chardonnay musts were fermented in Rousseau casks and barrels. A selected yeast strain ‘La Marquise’ was used and malolactic fermentation was blocked for this wine. The base wines were blended a year after harvest, including five percent red base wine made as a result of the saignée process. The wine then spent eighteen months ageing on the lees prior to disgorgement. Hundred Hills Signature Rosé is a fresh and mineral-driven rosé from an outstanding Pinot Noir vintage. This wine draws you in with generous floral aromas, followed by fresh summer berries, red plums and blackberries on the palate.
