A Mano 'Imprint' Primitivo Appassito 2022
A Mano 'Imprint' Primitivo Appassito is a red wine from Puglia made in the style of an Amarone. The grapes for this wine come from a selection of Mark Shannon's four favourite vineyards in the heart of the Primitivo growing region, located in the low hills east of Taranto in Puglia. The Primitivo vines are quite old; most are the original post-phylloxera plantings and range from 70 to 100 years old. The Primitivo grapes were dried for five weeks and on arrival at the cellars, the grapes were pressed, de-stemmed, cooled to 18°C and the must was allowed to ferment with natural yeast at its own pace. After fermentation the wine was aged for 6 months in a combination of cement and stainless steel before being bottled and then a further 4 months rest in bottle prior to release. The 'Imprint' Primitivo is a wonderful deep red in colour. On the nose, there are intense aromas of ripe dark fruit, crushed raspberries, plums and Mediterranean spices. On the palate, it is full-bodied with a great concentration of ripe, rounded fruit and long finish.
