Four Pillars Bloody Shiraz Gin
Established in 2013, Four Pillars is a small artisan craft gin distillery located in Australia's Yarra Valley, close to Melbourne. In 2015 they moved into a new distillery that houses their original copper still Wilma and her two new siblings, Jude and Eileen. All three of the stills are manufactured by Carl in Germany and deliver unbelievable purity of spirit, drawing extraordinary botanical flavour from the combination of rare, native and traditional botanicals they use. These are multi-award winning gins and represent some of the best craft spirits Australia has to offer. For the Bloody Shiraz Gin the Four Pillars Team have steeped the best Yarra Valley Shiraz grapes in high proof Rare Dry Gin for eight weeks. The fruit was de-stemmed but kept mainly as whole berries, and the tanks were kept cold and stirred daily. After eight weeks the fruit was pressed before blended with more Rare Dry Gin. Flavour-wise the Bloody Shiraz Gin is showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. The palate is lovely and sweet, with long juniper and spice characters to finish. The ABV is 37.8%, unlike Sloe Gin where the alcohol less than 30%. So it packs a punch and is ideal in a range of cocktails.
