Dyfi Distillery Navigation Gin
Navigation Gin is the newest release from Dyfi Distillery. Bottled at 57% alcohol-by-volume it is an alliance between seafaring tradition and maritime botany, brought together through the medium of umami. Navigation Navy Strength utilises a blend of maritime botanicals (distilled, not compounded, as with all Dyfi's other gins) and then aged in a very ancient vintage Madeira barrel to accentuate the umami notes in the distillate. Hand-foraged coastal botanicals are combined with exotic overseas spices, before distilling with a combination of vapour infusion and pot immersion. The distillate of umami-rich flavours and bracing freshness is then rested in an ancient canteiro Madeira barrel prior to release. The barrel was loaned to Dyfi by Ricardo Diogo de Freitas from the remarkable Madeira house of Vinhos Barbeito and is a family heirloom. These unique older Madeira barrels develop a lactone called sotolon which contributes an umami character to some of the most venerable Madeira wines. At Dyfi Distillery it binds together key botanical notes with the ageing vessel to create a completely unique gin.
