Champagne Pol Roger 'Pure' Extra Brut NV
While the flagship 'White Foil' is celebrated for its opulent consistency, Pol Roger 'Pure' Extra Brut -often simply called "Pure" - is the maison’s tribute to transparency. Launched to showcase the raw potential of their vineyard holdings, this cuvée is bottled with zero dosage (no added sugar). It is a wine of precision, offering a sensory experience that is both bracing and profoundly rewarding for the adventurous palate. Creating a Non-Dosé Champagne of this calibre is an immense technical challenge; without the "dosage" to mask imperfections, the base wine must be flawless. Pol Roger achieves this through a meticulous equal-parts blend of Pinot Noir, Chardonnay, and Pinot Meunier. The wine is then tucked away in the deepest, coolest reaches of their 33-metre-deep chalk cellars for at least four years. This extended lees aging is critical, providing the autolytic "biscuit" weight and velvety texture needed to balance the wine's vibrant, natural acidity. In the glass, 'Pure' is shimmering and gold with a remarkably fine, persistent mousse. The bouquet is a sophisticated invitation of white flowers, green apple, and wet stone, followed by a delicate hint of fresh bread crust. On the palate, the attack is electric and bone-dry, yet it reveals a surprising breadth of fruit - think grapefruit zest and white peach - all underpinned by a saline, mineral streak. The finish is incredibly clean, leaving a lingering impression of citrus and sea spray.
