Unico Zelo Esoterico 2022
Esoterico has become the cult wine for Unico Zelo. Not exactly a white wine, nor a red wine, it is best described as an Orange or Amber wine. The process involves three white grape varieties left on their skins (much like red wine) to develop rich aromatics and super zesty flavours. Aware of how drying these type of wines can be the team at Unico Zelo specifically sought Zibbibo (for it’s sweeter aromatics and waxy/oily mouthfeel), Fiano and Moscato Giallo (for it’s spritely acidity). No additions of any kind are made except for sulphur when the wine is bottled. There is no fining or filtration involved, with the wine allowed to clarify by gravity alone, resulting in a slight haze and sediment. There is no preconceived idea of what this wine should taste like, the key driver being one of just pure drinkability, mouthwatering acidity and 'say hello!' tannins. Perfect matched with a variety of spicy foods.
