Pavette Zinfandel 2021
The Pavette Zinfandel from Lodi in California combines Zinfandel (92%) Petite Sirah (3%) and Cabernet Sauvignon (5%). The Zinfandel and Petite Syrah were co-fermented with whole berries intact in closed top tanks, whilst the Cabernet Sauvignon portion was barrel fermented and then blended for elevage in tank and neutral barrel for 14 months. A harmonious balance of flavours, with the Zinfandel providing juicy fruitiness, the Cabernet Sauvignon contributing depth and complexity, and the Petite Sirah adding a spicy kick.
