Protero 'Aromatico' 2022
Protero’s ‘Aromatico’ is a blend of Gewürztraminer, Riesling and Sauvignon Blanc, inspired by the wines of Northern Italy and well suited to spicy food. After hand harvesting, the Gewürztraminer was settled as juice and fermented to dryness, while the Riesling and Sauvignon Blanc were blended as juice and co-fermented leaving some residual sugar. Both parcels were then blended together on their lees and left to settle in a stainless steel tank. The wine was racked once, but no further adjustments were necessary. On the nose, this wine is exotic and delightful with powerful notes of lychee, ginger, and sherbet which blend into a hypnotising perfume with lemongrass, dusty rose, and sweet spices. The flavours are engaging and uplifting on the palate as rose water and yeast buns are held together by a citrus spine that engages all the senses before a long grassy finish. The texture is silky and voluptuous.
