Coastal Stone Port Cask Whisky Element Series First Release
Manly Spirits Coastal Stone Whisky is an expression of the maritime elements and raw nature of the Australian coast, combined with the desire to create a whisky that exceeds expectations. The new make spirit for Coastal Stone Whisky is crafted at Manly Spirits Co. Distillery from grain to glass. Australian ale malt is mashed to extract the malt sugars which are then slowly converted by a blend of yeasts in a slow fermentation. The wash is double distilled in custom designed copper pot stills to produce a clean, sweet and malty new make spirit. Full size French and American oak ex port/tawny casks were sourced from Seppeltsfield winery and reformed by a Tasmanian cooperage by breaking down and reforming into shaved and charred 100L casks. All casks were 'first fill' providing an amazing flavour from the Port style wine previously held in the cask. To the nose this whisky displays whole bunch fruit with a sweet vanilla nose. On the palate, sweet plums and a baked dark berry pie with a soft caramel and buttery outlay leading to an elegant but robust red currant essence. The finish is hot and crisp to begin, leading to a long bittersweet finish. Captured in contemporary glass, sculpted with the eroded textures of weathered sandstone cliffs that border the Sydney coastline and sealed with a truly unique sandstone stopper. Only 700 bottles produced.
