Between Five Bells White Wine Blend 2020
The 2019 vintage of Between Five Bells White Wine Blend is the ninth release from B5B and uses Fiano (80%) as its base. This is split into two lots which are fermented separately. The first lot is destemmed, gently pressed and fermented in foudre. The second is fermented on skins for 10-12 days. While the wine is naturally fermenting in the foudre, they introduce Pinot Gris, Riesling, Chardonnay & Pinot Noir juice at different stages as a way of increasing the natural silky mouth feel while maintaining fruit vibrancy. This isn’t a new concept but rather a re imagining of chaptalisation.
