Hundred Hills Blanc de Noirs 2019
The Hundred Hills Blanc de Noirs Vintage Sparkling is crafted from a single parcel of south-facing Pinot Noir harvested late in the season. After gentle pressing in the Coquard press, the Pinot Noir must was fermented in stainless steel tanks to retain fruit. A selected yeast strain ‘La Marquise’ was used, and a full co-inoculated malolactic fermentation took place. The wine was aged in stainless steel only and bottled the year following harvest. The wine spent thirty months ageing on the lees prior to disgorgement. Deep golden in colour, the Hundred Hills Blanc de Noirs has vibrant acidity, with a blood orange zestiness that draws together a generous, round palate of red fruit. Macerated strawberries, raspberries and red apples lead onto a peaches and cream finish.
