Bedoba White 2024
Bedoba (meaning ‘Day of Destiny’ or ‘Day of Luck’) is the perfect bridge between the ancient world and the modern palate. The Bedoba White is a blend of two indigenous giants: Rkatsiteli (70%) for power and Kisi (30%) for fragrance. At the winery the grapes were vinified separately. The Rkatsiteli was pressed, settled and fermented in Qvevri without skins, while the Kisi was cold soaked on skins for 24 hours before being pressed and fermented in stainless steel. Following alcoholic fermentation, around 20% of the Rkatsiteli was transferred to 500-litre French oak barrels for malolactic fermentation, with the remainder completing malolactic in Qvevri. The Kisi did not undergo malolactic fermentation. The final blend was aged for six months on fine lees in second- and third-use French oak barrels before been bottled. The result is a wine that feels different in your mouth before you even taste it. It is waxy and textural, coating the palate with layers of baked apple, ripe pear, and dried apricot. But the real magic is the finish - a savoury kiss of honeycomb, toasted almonds, and wild mountain herbs.
