Shaw + Smith Sauvignon Blanc 2022
The Shaw + Smith Sauvignon Blanc has become known as a benchmark style for Australian Sauvignon Blanc. It has remained fresh, aromatic and pure over the past 28 years, with trademark pink grapefruit characters. In recent vintages the style has evolved through sourcing fruit from higher and cooler sites. Upon arrival at the winery, the hand-picked whole bunches are de-stemmed and gently pressed. The must is left to settle before being transferred to temperature-controlled stainless steel vats for a cool fermentation to retain the varietal purity and bright fruit aromas of the Sauvignon Blanc. Following fermentation, the wine is matured on its lees for a short period and bottled early under screw-cap to retain its vibrancy. Pale lemon in colour. On the nose, this wine showcases a vibrant pink grapefruit character along with green apple and floral nuances. It has nice mid-palate weight and texture and a fine acidity.
