David & Nadia Aristargos 2023
Aristargos is a masterclass in the art of blending wines. While Chenin Blanc remains the heart of the wine, David and Nadia have woven together a tapestry of Semillon, Colombard, Roussanne, Clairette Blanche, Marsanne, Verdelho, Viognier, and Grenache Blanc. Sourced from 16 different vineyards - mostly on the rugged granite soils of the Paardeberg - it is a wine that prioritises site and soil over any single grape character. On the nose, it opens with notes of candied lemon, chamomile, and crushed stones. The palate is brilliantly balanced; expect a medium texture with a "glossy" consistency, kept perfectly upright by a fine bead of acidity and a refreshing, saline bitterness on the finish.
