Astrid Hubert only makes single vintage Calvados which is of sublime quality. She uses 15 varieties of apples, together with 5% of pears, and never sprays her crop. The cider is left in foudres for 1 year before distillation, the Calvados then being matured in long old oak barrels. Complex in taste, round and very long on the finish.
