

Achaval Ferrer Quimera
The Achaval Ferrer ‘Quimera’ is a red wine blend produced using Malbec, Cabernet Sauvignon and Merlot grapes. Unusually, blending for the Quimera takes place early on in the winemaking process; while most producers keep ingredients separate for as long as possible to see how they develop, Roberto Cipresso and the rest of the Achaval Ferrer team are adamant about the benefits of early blending. Very intense jet-plum, clinging to the glass, this presents a mix of blueberry, raspberry ,cassis and crème de mûre - very accessible and upbeat. The palate is aromatic and very pure, prickling with underlying spice and minerals. Beautifully textured, opulent and supple, this dances on the palate - incredibly fresh and perfumed with rose and violet vying with hints of mocha, dark chocolate and dried fruits - tannins well integrated and ripe.
