
Tbilvino Saperavi 2020
The Tbilvino Saperavi (sa-per-ah-vee), appropriately meaning “dye”, is probably Georgia’s best-known red grape variety. It is renowned for its deep colour and tannic structure, which comes from the dark skins and pink flesh. The grapes for this wine come from vineyards in the Vachnadziani sub-region of Kakheti, planted on alluvial soils. The grapes were harvested by hand, before being pressed and undergoing alcoholic and malolactic fermentation in stainless-steel tanks. Once complete, thirty percent of the wine is passed to French oak barrels to age for between one and two months. Made in a fruit-forward style, this wine highlights the grape’s typical floral aromas, alongside bold flavours of forest fruits. The palate is well rounded and has an elegant, fresh finish.
