Elephant Hill 'SEA' Sauvignon Blanc
‘Earth, Sea and Stone’ are a range of limited edition, world-class wines designed to reveal the purest characters of Elephant Hill's three unique vineyards in the Hawkes Bay region. This is a project of 'terroir' and each wine is the fruit of a single site or single blocks, a single grape variety from a single year. The South Pacific Ocean neighbouring the Te Awanga Estate vineyard is the inspiration for the growing of Elephant Hill 'Sea' wines. Cooling sea breezes, shingle soils and delicate winemaking underlie the elegance and purity strived for in this Sauvignon Blanc. The grapes were whole-bunch pressed to enable gentle extraction of the juice and underwent a natural fermentation using indigenous yeast. 50% was fermented in 500L oak puncheons and 50% in stainless steel tank. 16 months on lees. Sea is an exceptional expression of Sauvignon Blanc, from the coastal Te Awanga vineyard. Subtle aromas of green herbs and perfumed alphonso mango, with a waft of saline. The palate shows crystalline fruit purity with a fine and fresh finish.
